Despite my adamant efforts not to waste food, one or two scraps will inevitably become inedible in my household. I dropped a whole sippy cup of milk on the floor, for instance.
I keep a list on the refrigerator of the small amounts of food I do waste; this helps keep me focused and encourages me to do whatever it takes to keep the list from growing.
When I first started saving all my scraps, I found five strawberries in the back of my refrigerator. They weren't good even when I bought them, and by this time they were wrinkly and had changed to a dark maroon.
Not to mention everything in the back of my fridge freezes, so my mushy dark strawberries were also fruit ice cubes. (Now that I've learned how to eat waste-free, I can't imagine letting five strawberries go bad! Why didn't I just throw them in the freezer and make a smoothie later?)
I started to write the five strawberries on my throw-away list, but I felt bad. Up until that point, everything I had thrown out that month was the result of situations I couldn't control, like when my baby dumped salt over a hard boiled egg.
These strawberries, on the other hand, went bad because of my neglect. I didn't feel right throwing them away. They weren't moldy, so they were still safe, just not appetizing. Time to think outside the box. After a few minutes of pondering the situation, I remembered that I used to make strawberry lemonade in college. All I did was add cut up strawberries to lemonade and let it sit. The longer I let it sit, the better it would taste, but overnight would generally do the trick. Once the strawberries have soaked into the lemonade, you can drink it with the strawberries still in, take them out and use them for something else, or blend them up. Either way, it's delicious. By the way, this recipe makes great popsicles, if you have a popsicle mold. Another scrap saved! Well...I'm still not sure if this counts. Once the juice was gone, I threw out the mushy remains of the strawberries. But at least I used them. Later, I made this drink at my parents' house and took a picture of it by the pool. I did ZERO editing on this picture. The water in the pool was already that blue, and yes, the red in the lemonade was really that red. This post is making me thirsty! View recipe on Kulinarian.com
