I was introduced to the beauty of salami by a friend of mine who liked to sit inside the refrigerator when she snacked.
The first time I spent the night at her house, I woke up in the morning, went into the kitchen, and found her sitting on the ground with her elbows propped up in the fridge.
"What on earth are you doing?" I asked.
"Eating salami." "Why?" "Because it's good. Try some." I took a slice of plain salami, and she was right. It was amazing.
So this week when salami was buy-one-get-one at my local grocery store, I snatched it up. I didn't know what to do with it until I saw foccacia bread was on sale at Walmart. Sandwiches!
I got the deli to cut 6 slices of cheese for the six pieces of foccacia (I wouldn't eat a whole pack if I bought the pre-sliced). Then I went home and bragged to my husband about how much money I saved on the sandwiches that I assumed he would take to work. "I don't like salami," he told me. "Since when?" "Since forever." "B-but," I stuttered, "We ate them every day for lunch at Disney World!" "No, those were roast beef." Pause. "What am I going to do with six salami sandwiches!" He shrugged. My problem. Bread keeps in the fridge, but it gets wet and mushy if you keep it in there too long. I thought, maybe I could freeze some of the bread and the salami and the cheese and then defrost them later... or, I could assemble sandwiches before putting them in the freezer. So much easier! Cheese can freeze, but if you put in a whole block of it, the cheese with get all crumbly. When you freeze a slice of cheese on a sandwich, though, the texture is perfectly the same once it's defrosted. Since freezer burn is always a concern, I went through my usual freezing routine: wrap in plastic wrap to keep out the air, wrap in aluminum foil to keep the plastic wrap in place, put in a ziplock to be an overachiever, and write the name of the food on the bag so I can remember what on earth I wrapped in aluminum foil and put in a ziplock bag months ago. It was extremely convenient to have four delicious sandwiches waiting for me in the freezer. They defrosted pretty quickly, and I could microwave them to room temperature when I was short on time. I was actually surprised how often I needed to grab a ready-made sandwich and run out the door. Next time I do this, I'll try it with sandwiches my girls would enjoy, too. That would be great for when we go to the park and I want to pack a picnic. Plus then I'll never have to throw out deli meat; I'll just make sandwiches with it before it goes bad and freeze them. I should also make sandwiches my husband would enjoy so he can take them to work. Too often he goes to pack a lunch and there aren't any leftovers he can quickly throw together, so he ends up going to a restaurant. Having already-prepared lunches in the freezer will help. There are so many applications to freezer sandwiches!
