"How do you freeze food so it doesn't get freezer burn? I too freeze leftovers my family is tired of eating, but when it sits in the freezer for weeks it gets frost on it. Then, my family refuses to eat it. Is there a solution for this?"
I don't blame your family; freezer burn is nasty. Air is the cause of freezer burn, and the longer food stays in the freezer, the more time it's exposed to air. The solution is to keep air away from the food as much as possible. That's why they sell those vacuums that seal up food.
(A vacuum-sealed bag won't keep pecans fresh for five years, just so you know. I learned that the hard way.)
I use plastic wrap on everything I freeze. After wrapping it in plastic wrap, I will either wrap it in aluminum foil to keep the plastic wrap in place, or I will put them in a freezer Ziploc (which is stronger and lets in less air than regular Ziplocs). Sometimes, I do all three. If you put food in a container instead of a bag, there will be air on top. You can lay plastic wrap so it touches the surface of the food to protect it from air. You can even lay plastic wrap over ice cream. Using Ziplocks is better than containers not just for freezer burn; it saves freezer space because the bags lay flat, and then you can use the container for other things. I hate having my expensive Tupperware tied up in the freezer for weeks. The most effective way to prevent freezer burn, of course, is to eat the food before it has sat in the freezer for too long. Every time I go grocery shopping, I look through my refrigerator, my freezer, and my cupboards to try and come up with as many meals as I can that will use up the ingredients I already have. Granted, if you're family is sick of eating a meal it might take weeks for them to want it again, but you can at least remind yourself it's there so it doesn't stay in the freezer too long. Or, it your family is really truly sick of that food and won't want it in the foreseeable future, you can always give it away. Few people will say no to free food.
