Congee is a savory Chinese rice porridge that is eaten for breakfast (though I like it for lunch) or served to sick children. Itâs basically their version of chicken noodle soup.
I was skeptical of this recipe (my husband was horrified by it), but the only ingredients were rice, water, and chicken bones. Hard to say no to that! Besides, I love ethnic foods. Thereâs no greater thrill for me than having an experience completely unlike any Iâve had before, and the older I get, the more difficult such experiences are to come by. Congee definitely looked exotic enough to try. And now Iâm wishing we had more old and dry rice, because I really enjoyed it. As much as I liked the taste and the silky texture, what I enjoyed more was the way I felt afterwards. Thereâs something about this porridge that makes me warm and full and happy. It totally makes sense that they give it to sick children. Congee would certainly make me feel better! Maybe Iâll have to make it even when I donât have leftover rice. Congee - Chinese Rice Porridge
