From the start, my husband has been 100% supportive of my quest to stop wasting food.
A few days ago, I saw in the fridge that he had actually saved two bites of oatmeal that one of the girls didn't finish. I would have either eaten it myself or given it to the dog, but he put plastic wrap on those two bites and put the bowl in the fridge. Yesterday, my husband and I got shrimp po-boy sandwiches and we ran out of shrimp long before we ran out of bread. He saw me eyeing the ends of his sandwich and asked, “So, what are you going to do about restaurant food?” He's still getting used to my commitment to never waste food, so I often hear him ask "what are you going to do" questions.
“I’m going to take it home,” I answered with a shrug.
Despite his normal level of support, this was too much for him. He scoffed at his seemingly useless scraps. “And do what with it?” “I dunno. I’ll figure something out.” He opened the remains of his mostly-eaten sandwich and said, “It’s just soggy bread. No one’s going to eat that.” “It’s still food.” "O-kaaaay.” So I was stuck with eight ends of bread and a stubborn desire to prove him wrong. We watch Cutthroat Kitchen a lot, even though all my friends think it’s bizarre for me to enjoy such a vicious game. Whenever the chef’s meals don’t go the way they planned, they serve them “deconstructed” and act like it was a conscious decision. I considered making “deconstructed” sandwiches. Then I had a different idea: sliders!
Sliders started out as little hamburgers (think Krystals) but can be any kind of sandwich that you can eat in a couple of bites. I could make a tuna melt slider from po-boy sandwich bread.
I put sliced cheese on the bread slices and broiled them until the cheese got that yummy, caramelized flavor, then mixed the tuna fish with mayonnaise and relish and put it on top. After I completed my creation, I brought my plate to the living room where my husband was reclined on the couch. In my best waitress voice, I said, “Would you care for some open-faced tuna melt sliders?” We laughed until we cried. They were actually really good. Not only do I like po-boy bread, but the sauce that was still on it paired very well with the tuna. And this might sound weird, but I thought the shape was fun. I liked "sliding" the sandwiches in my mouth. Another scrap saved!
