"My husband won’t eat food that’s over a day old. He’ll eat the leftovers the day after I make something, but not later than that. What should I do?"
Goodness, if I knew how to change men’s minds I’d have a very different blog and I’d be making a lot more money.
While I am an avid supporter of being responsible with the food we buy, your marriage comes first. It's worth talking about, but probably not worth causing a problem.
If you can’t get your husband to change how he eats, the only advice I can give you is to make smaller meals. That means you’ll have to cook more often, I’m afraid. Here’s one thing you can try; if you have to cook more often to cater to what he likes, you could tell him that it’s a burden for you and ask him to help out. Some of the meals could be his responsibility, or he could do the dishes afterwards. He might hate it enough to eat his leftovers.
