Brace yourself for the best way to use leftover french fries... and possibly my new favorite breakfast!
One of my readers contacted me to say he had leftovers after a dinner of cheddar wurst hot dogs and tater rounds, so he "put an egg on it" and converted them into breakfast. He placed the taters and diced sausages in muffin tins, cracked an egg over each, and baked until the eggs were set.
After reading this, I thought, "Huh. French fries aren't all that different from hashbrowns or taters." I had some leftover french fries in my fridge that were hard as a rock (along with a few Hebrew hot dogs), and I had no idea what I was going to do with them.
When I told the reader my idea to use french fries and Hebrew hot dogs, he said it would be better to do a scramble instead of poached eggs in the oven since the french fries needed to be softened again. Holy cow, guys. This breakfast was fun, filling, satisfying, easy, cheap, and my kids loved it. Oh, and it was delicious. I actually went out to McDonald's and bought more french fries just so I could make a breakfast scramble out of it. Since I didn't have any meat to use, I tried it without. The breakfast scramble wasn't nearly as good, even when I added ketchup. Adding flavorful meat is essential to this recipe. We used Hebrew hot dogs, but you can use any meat as long as it has a lot of flavor: chorizo, ham, kielbasa, and bacon, for instance. (I wonder if bratwurst, pepperoni, or salami would work? Maybe not.) We tried it with breakfast sausage, and that was quite delicious, too. Next time I'm feeling adventurous and crazy, I might try to make it with taco meat and wrap it in a tortilla. French fry breakfast burrito...why not? I wouldn't try the scramble with a bland meat, like ground beef or shredded chicken. You can also experiment with different kinds of cheese. We tried cheddar, but you could always try mozzarella, pepper jack, or provolone. I wouldn't think adding vegetables to this recipe would improve it, but I'd be happy to be proven wrong by one of my readers if any of you want to try it and let me know how it went. Maybe red bell peppers or tomatoes? If you try any experiments with this recipe, let me know how it went!
