The moment I started this blog, friend and family started sending me videos, recipes, and articles with food-related ideas to inspire me. One idea I keep seeing over and over again is how to make vegetable broth out of scraps. (Think onions skins, carrot heads, celery leaves, things like that.)
Obviously, that idea is a home run for No Scrap Left Behind. To think that I could turn garbage into something useful and delicious...brilliant! At least, it sounded brilliant.
The video I saw told me to use onion, carrot, celery, garlic, parsley, mushrooms, and potato peels.
Boiled potato peels? That sounded repugnant. But far be it from me to question the wisdom of the internet, so I decided to give it a try.
The first time I made it, I used onion, bell pepper, carrot, potato peels, and probably some other things, but I can't remember. Really, only one memorable detail stands out in my mind: It was was TERRIBLE. I feel a little ridiculous, because honestly, it tasted exactly how you would expect it to taste (like dirt). My gut told me this recipe wasn't going to work, but I trusted the internet instead. If a video says a recipe is good, who am I to argue? A key to not wasting food is to anticipate how a recipe is going to taste and fix problems during the cooking process instead of after. That way, you're much less likely to make inedible food that needs to be thrown out.
But I didn't listen to my gut, and a quart of toilet water broth got dumped down the drain.
Still, I loved the concept and I didn't want to give up. Potato peels were a bust, but what if I listened to my instincts this time and only used vegetables that I thought would taste good together? So I collected vegetable scraps that I wanted this time, and when I had a full bag in my fridge, I boiled them for three hours. Here's what I used:
Voila. Six cups of yummy vegetable broth that I later used to make black bean soup. Mmm.
So, now you know next time you want to make vegetable broth: Potato peels = baaaaaaad.
